A new ice cream store, Blank Slate Creamery, is opening this June on the corner of West Liberty and 1st street, here’s the link to the original article.

Other than the fact that it looks pretty delicious, with flavors like blueberry pancake, white chocolate raspberry swirl chip, pistachio and mocha almond fudge, it also relates to this class because the woman who is starting the business, Umich alum Janice Segler, is trying to use only natural and locally sourced ingredients in her ice cream.

By natural ingredients, she means she is making the ice cream without preservatives, stabilizers or emulsifiers. While it is debatable whether the alternative ice cream process will actually be better for the environment/our health, in my experience the stores that put the effort to try to do so end up making better tasting ice cream.
