This is a compilation of the changes in food trends throughout the 20th century in the United States. The data comes from the USDA in a variety of surveys and food consumption, production, and purchases in the past 100 years. The general trends reflect a change in affluence and food expenditures. I thought that this study was interesting because it goes along well with the “Eating Right in America” themes that we are currently reading. Also, the clear graphs demonstrate the trend changes well in an easy to read way.

A few intriguing changes that are highlighted are the decline of milk consumption with carbonated beverages as their replacement, the decline in butter consumption, and the general increase in calorie supply.
